Directions For Baking
You Will Need:
- One 12 Cup Muffin Tin
- ½ Cup Unsweetened Apple Sauce
- 3 Large Eggs
(All ingredients should be room temperature).
- Preheat oven to 375 degrees.
- In a medium size bowl combine all ingredients and with a spatula mix completely. (Batter will seem too dry at first; continue mixing until batter is fully incorporated).
- Once batter is mixed, spray muffin tin with non stick spray and fill muffin cups 2/3 full.
- Place in oven, on middle oven rack and bake for 12 minutes. (do not overcook)
- Remove from oven and allow to cool.
*Store in airtight container.

Whey Protein Isolate
This is a partially hydrolyzed natural whey protein isolate that has two independent trials. Aside from the functional benefits of this particular ingredient for purposes of baking, the independent trials on this ingredient showed significant decreases in fat mass while retaining lean body mass.
Whole Algal Flour
This is a whole food ingredient that is free from allergens, vegan, not bioengineered, and gluten free. It significantly improves mouthfeel making each bite richer and creamer. This ingredient is rich in the good fats (monounsaturated fatty acids) that your body needs. This ingredient is trans-fat free and cholesterol free.
This particular oat bran is silky and creamy. It provides a high fat mouthfeel experience but a low-fat nutrition matrix. This oat bran has a neutral taste and remains stable for baking purposes.
This is a natural dietary prebiotic fiber. Silver Fern™ Brand uses this particular ingredient for the mouthfeel it provides as well as the many nutritional benefits.
Whereas most baking mixes load up on sugar (including various sugar names), Paka baking mixes uses Kakato™ sweetener as its sugar substitute. This allows for a teeth friendly, prebiotic, low glycemic index, and fiber sweetener sugar substitute to give you the sweetness you crave from sugar without all the negatives of sugar.
This is a natural clean flaxseed hydrolloid and protein system to help with the moisture management and shelf life extension of our baking mixes. It increases the baking good volume, improves the dough extensibility, and increases mouthfeel.
FREQUENTLY ASKED QUESTIONS
Why are Paka baking mixes so much more expensive?
We use premium ingredients that are three times more expensive than other baking mixes. For example, to eliminate enriched, bleached, or rice flours, we use protein powder, almond flour, oat flour, and whole algal flour, just to name a few. These flours and protein powders provide tremendous benefit to the body but come with the added price tag. Kakato™ sweetener is much more expensive than sugar or artificial sweeteners but gives you prebiotic fiber, sweetness, and other health benefits that sugar, sucralose, and sugar alcohols cannot provide. Silver Fern™ Brand has a policy of using the best ingredients to make the highest quality products, regardless of cost.
How do your products have so few net carbs?
This process started a long time ago. Silver Fern™ Brand started years ago formulating a sweetener to replace sugar to begin the process. Most baking mixes have some form of sugar as one of the top ingredients because the sweetener is such a crucial part of any baking mix. By formulating and implementing a natural sugar substitute we were able to start reducing the net carbs. We also realized we couldn’t use a lot of traditional flour in our mixes. After a long search we discovered ingredients (including other flours) that offered many of the same benefits as traditional flour but with more fiber, protein, and good fats.
Do you think sugar is bad?
It is our opinion that some sugars, like those found in fruit, are okay. But we do believe one should reduce sugar intake wherever possible to improve one’s health. Silver Fern™ Brand does all it can to remove sugar from its products.
Do Paka baking mixes cause gas?
Yes. More fiber can cause more gas. Paka baking mixes use a special blend of fibers, however, to reduce stomach discomfort.
Do you believe one should avoid carbohydrates?
No. We believe one should reduce or remove unnecessary carbohydrates for carbohydrates that offer better nutritional benefits. Silver Fern™ Brand is not opposed to carbohydrates.
Do you believe that gluten is bad?
Yes and no. For people that are allergic to gluten it is obviously bad. For many the choice to avoid gluten is because it causes discomfort and in those circumstances it is also bad. But as a company we are not opposed to consumption of gluten for those that do not suffer from an allergic reaction or intolerance to gluten. Silver Fern™ Brand formulators removed ingredients containing gluten in many instances because those ingredients contain too many carbohydrates.
