Lemon Blueberry Protein Pancakes
- Prep time: 5 minutes
- Cook time: 10 minutes
- Yield: 6-8 small pancakes
- 1. Pour the pancake mix, milk, water, egg, and lemon juice in a bowl until mixture comes together. Add in blueberries and lightly mix.
- 2. On a buttered skillet, pour 1/4 cup of batter in a small circle for each pancake. Let them cook on medium-low heat for 3-5 minutes until golden, then flip on the other side for another 3-5 minutes.
- 3. Serve warm with butter and maple syrup if desired. Enjoy!
